Medal for Wanaka butcher’s unique beef-only salami

The Butcher’s Block and Smokehouse Wanaka has featured among the medallists in the 2018 Devro Great New Zealand Sausage Competition on their first attempt at the nationwide competition run by Retail Meats New Zealand on 19 October.

The Butcher’s Block’s beef classic salami won a silver medal in the ‘continental ready-to-eat’ category.

This smoked beef salami is unique in that it is made entirely of beef products, and does not include any pork as most salamis do, says Bruce Scott, managing director of The Butcher’s Block and Smokehouse.

“Most salamis use pork in a couple of ways in the mix,” says Scott. “We have worked with our butchery goods suppliers D M Dunninghams, who supply our sausage and salami casings, to come up with a pork-free mix.

“This means our beef salami is now 100 per cent pork-free which may have particular appeal for those of certain religious faiths which don’t allow the consumption of pork. In fact, we now also use the pork-free ingredients in our very popular venison salamis and we’ve added a new lamb salami, using the pork-free ingredients, which is really good.”

Scott has also made sure the beef salami is Halal-certified, the only one in New Zealand.

Scott says he and fellow director Jeff Smith, who handles the smallgoods production side of the business, are delighted that their beef salami has won a medal in the hotly-contested national competition.

“More than 90 butchers from independent retail outlets like ours and supermarket chains entered this year’s competition with over 480 sausages and sausage derivatives like salami and chorizo,” says Scott, who has won medals in this competition with his previous business Scott’s Meats in Helensville. “It’s a real thrill for our team, Jeff and myself to have our commitment to producing top quality smallgoods recognised in this way.”

The Butcher’s Block and Smokehouse opened in Reece Crescent in December 2015 and is about to head into its fourth year of operation. As Wanaka’s only dedicated butcher, Scott says he strives to continually provide the best quality meats from South Island suppliers and hit that balance of premium and more economic cuts required by the different sectors of the Wanaka public.

The Butcher’s Block is also a licenced homekill and recreational game processor, which comprises a significant portion of the thriving business’s operation. “Feedback from our homekill and game customers is overwhelming positive, particularly for the high standard of our smallgoods like sausages, salami, and biersticks,” says Scott. “We really appreciate the ongoing and repeat orders from many customers around the wider Central Otago region.”
