A lamb backstrap is a premium cut of lamb which has a slightly milder flavour than leg of lamb. It can be cooked quickly without compromising a meltingly tender texture. Don’t overcook!

Most of our lamb cuts come from grass-fed and locally-farmed lambs, sourced from Hawea farmers who select and finish prime animals exclusively for The Butcher’s Block and Smokehouse. Depending on demand, we may source certain cuts from other premium meat suppliers in the South Island.
