Typically sold as thick, bone-in slices, lamb neck chops are inexpensive and full of flavour. Like oxtail, neck meat also has plenty of collagen, a natural compound in red meat that lends a silky richness to stews, braises, ragùs, and other slow-cooked dishes.

All our fresh lamb comes from premium, grass-fed, South Island-raised lambs which we purchase in carcass form from a trusted supplier, so we can age the meat for best possible quality and minimum waste.
